I love this soup. It’s got to be my favorite soup for detoxing. Great for any time of year!

Super healthy, high in antioxidants, and excellent for your herbal detox program or herbal slim program.

Serves 4 people

Ingredients:

  • 4 small or 2 x large onions
  • 1 x large leek
  • 6 cloves of garlic
  • 1 can of chopped tomatoes
  • 4 fresh tomatoes
  • 100gm of tomato paste
  • 1 tsp turmeric
  • 1 tsp Cayenne (or paprika)
  • 1 tsp caraway seeds
  • 2 tsp miso paste

 

Method:
Finely chop and lightly heat onions, leek and garlic in olive oil over low heat. Sweat with the turmeric, cayenne and caraway seeds for a couple of minutes. Add canned tomatoes, chopped fresh tomatoes and tomato paste. Add water to make enough soup and stir over heat until the vegetables are cooked. Just before serving – add 2 teaspoons of miso. Adding at the end of cooking preserves the nutrients in miso.

I like to add a little chopped parsnip into mine to give that extra texture.
