Serves 2 people
Ingredients:
- 1 x eggplant
- 1 x onion
- 6 cloves of garlic
- 4 x button mushrooms
- 1 x capsicum
- 2 x tomato
- 1 x avocado
- 1 tsp turmeric
- 1 tsp chili flakes
- A small handful of mixed herbs.
Method:
Chop everything into bite-sized slices. Coat the eggplant with turmeric. Heat oil in a pan and throw in the eggplant. Saute with onions and garlic for about 2-3 minutes, then add capsicum, mushrooms, mixed herbs, and chili flakes. Saute for 5 minutes and serve with chopped tomato, avocado, and aioli.
