I love this soup. It’s got to be my favorite soup for detoxing. Great for any time of year! Super healthy, high in antioxidants, and excellent for your herbal detox program or herbal slim program. Serves 4 people Ingredients: 4 small or 2 x large onions 1 x large leek 6 cloves of garlic 1 can of chopped tomatoes 4 fresh tomatoes 100gm of tomato paste 1 tsp turmeric 1 tsp Cayenne (or paprika) 1 tsp caraway seeds 2 tsp miso paste Method: Finely chop and lightly heat onions, leek and garlic in olive oil over low heat. Sweat with the turmeric, cayenne and caraway seeds for a couple of minutes. Add canned tomatoes, chopped fresh tomatoes and tomato paste. Add water to make enough soup and stir over heat until the vegetables are cooked. Just before serving – add 2 teaspoons of miso. Adding at the end of cooking preserves the nutrients in miso. Thai Style Broccoli & Mushroom Soup
A spicy little number and a classic Thai-style soup, similar to Tom Yum. Serves 2 people Ingredients: 1 large carrot 1 small head of broccoli, (or a handful of long green beans) A dozen cherry tomatoes A generous handful of white or brown mushrooms 1 x green capsicum 1 x red capsicum 3 cloves garlic 2 x 440g can coconut milk 1 tsp honey Juice of 1 x limeSpices Below (or use authentic Thai green curry paste) 3 x kaffir lime leaves A stalk of lemongrass 1-2 small red chilies or ½ tsp chili flakes 1/3 cup fresh coriander leaves 2 tbsp fish sauce Method: Chop carrot, broccoli, mushrooms, and capsicum into bite-sized pieces. Finely chop or mince lemongrass, kaffir, chili, garlic, and coriander. Heat wok or pan and add oil. Add garlic, chili and stir for 2 minutes. Add carrot, broccoli, and ½ cup of water. Cover and simmer for 2-3 minutes. Add mushrooms, tomatoes, and stir-fry for 2-3 minutes. Lastly, add lemongrass, kaffir, coconut milk, and the remainder of the ingredients stirring continuously. Allow to simmer and sit for 5 minutes before serving. Lovely Limes: Limes contain unique flavonoid compounds that have antioxidant and anti-cancer properties. Beetroot, Celery & Chive Salad
How simple can a great salad be? Serves 2 people Ingredients: 2-3 whole beetroot ½ a head of celery a handful of fresh chives Method: Peel and steam beetroot until a little soft but still firm. Allow to cool, then chop into bite-sized wedges. Chop celery into small pieces and stir into beetroot along with finely chopped chives. Dress with fresh lemon juice or red vinaigrette. Did you know? Kale & Lime Smoothie

Thai Spicy Carrot & Apple Salad
A little hot number – and such a simple recipe. I often end up with a few too many carrots and apples in the fridge and this is a great way to use them up, not to mention it’s super healthy. With just the right amount of fresh chili, this is guaranteed to get your taste buds going. If you’re not against eating a little fish, you can include the traditional Thai fish sauce and it tastes amazing. That’s OK on your detox too. Serves 2 people Ingredients: 6 x cloves of garlic 2 tbs chili flakes 1 tbs honey 2 tbs olive oil 1 tbs lime juice 4 x large carrots 1 x crisp red apple ½ cup of raisins ¼ cup chopped cilantro leaves Fish Sauce (optional) Method: Shred the carrots, dice the apple and mix together in a bowl with the raisins, finely chopped garlic, cilantro and chilli flakes. Blend olive oil, honey, fish sauce and lime juice in a separate bowl until smooth and then pour over salad. All ready to eat. Mung Bean Coleslaw
A delightful dinner or lunch option. Serves 4 people Ingredients: A handful of mung bean sprouts ¼ cabbage 1 x large carrot 1 x tomato 1 x red onion A handful of baby spinach Fresh parsley Lemon juice Olive oil White Wine Vinegar Pickled Cucumbers and olives as an extra if you like Method: Slice the cabbage into chunky bits and throw in the salad bowl. Shred the carrot and slice the red onion then throw them in too. Toss in the mung bean sprouts and spinach. Dice up the parsley and throw it into the mix. Toss the coleslaw in the bowel. Squeeze the lemon juice all over. Drizzle the white wine vinegar and olive oil over the top. Cover with sliced tomato. Add pickled cucumbers and olives if you wish and enjoy! Avocado, Broccoli & Cucumber Salad
Avocado is highly recommended when detoxing as it contains great fats for your body and for that extra bit of healing energy. Quick, easy, fresh, green, and lovely! Serves 2 people Ingredients: 1 large or 2 small avocados 1 head of broccoli 1 leek 1 garden cucumber Olive oil Fresh basil or kalamata olives You can add a boiled egg if you’re on a 1-month gentle detox. Mesclun Salad with Mushrooms
A lovely fresh salad, full of healthy greens, mushrooms, avocado, and tomatoes. All with a pinch of oregano! Fantastic for your detox program. Add more mushrooms to this recipe to make it even more filling. Serves 2 to 4 people Ingredients: Salad Dressing: 8 cloves of garlic Plain unsweetened yogurt 1 x lemon 2 tbsp of extra virgin olive oil 1 tsp of oregano Salad: 6 x large field mushrooms 2 tbsp of extra virgin olive oil Mesculin salad greens Half an avocado 2 x tomatoes A dozen olives 6 pieces of sundried tomatoes Method: Prepare the salad dressing by peeling then crushing the garlic and putting it in a small bowl. Add the yogurt then squeeze in the lemon juice from the lemon. Add the extra virgin olive oil and the oregano. Mix until smooth. Cut up the field mushrooms into think pieces and saute in extra virgin olive oil until soft. Throw the mesclun salad greens into a large bowl. Skin and slice the avocado and add to the green salad. Place the warm field mushrooms onto the top of the salad and add the tomatoes. Add a dozen olives to the salad. Cut up the sundried tomatoes and add them to the large bowl. Green Rocket Salad
Rocket is such an amazing herb I grew this Rocket in my herb garden and I can’t believe how much rocket I have to eat within the first month. Not only is it delicious but super healthy. I don’t have access to rocket then Iceberg lettuce, or Mesclun mix will do the trick. From one little pack of seeds, I have enough rocket to make a salad almost every night. Fermented Vegetables – Sauerkraut
Fermented vegetables are in fashion! At last, the benefits of fermented vegetables (Sauerkraut) are becoming commonplace. They give digestive enzymes and beneficial bacteria for healthy digestion and immune function and these “gut-friendly” foods are thought to help with bloating, immunity, libido, and Irritable Bowel Syndrome. Making them couldn’t be easier! This is such a simple process and our recipe takes all the mystery out of it if you’ve never done this before. Simple ingredients: A clean glass jar with a lid Organic vegetables (including the hottest vegetable of the moment, cauliflower) Water Unrefined salt Vegetables – Use a single vegetable or any combo, (e.g. cabbage, capsicum, cauliflower, broccoli, cucumber, onion, carrot, fresh herbs). By the way, the cabbage family of vegetables is great for the liver. The greatly enhance liver function and support Liver detox. Why organic? Apart from the obvious reason that they do not contain pesticides, organic vegetables abound more in a variety of beneficial types of bacteria. This will make the fermentation process more successful and will also provide your gut with a variety of very good bacteria. Method Finely chop the vegetables Place in jar. Pour in saltwater solution. (2 Tbsp salt per 1 Liter or 1 quart of water…well dissolved). Vegetables must be completely covered but leave a space of about 2 cm to allow for bubbling during the fermentation process. Screw lid on jar. Leave, away from direct sun, for at least 3 to 4 days, opening the jar once or twice daily to release gas. We like to give the vegetables a bit of a poke with a wooden chopstick to encourage the release of the gas bubbles. After a few days, the vegetables will be fermented and ready to eat. From then on, store them in the refrigerator. They will keep for a long time…months…but must be refrigerated and must be kept covered by the fermentation liquid. Serve with a meal to aid digestion.
