Fermented vegetables are in fashion! At last, the benefits of fermented vegetables (Sauerkraut) are becoming commonplace. They give digestive enzymes and beneficial bacteria for healthy digestion and immune function and these “gut-friendly” foods are thought to help with bloating, immunity, libido, and Irritable Bowel Syndrome. Making them couldn’t be easier! This is such a simple process and our recipe takes all the mystery out of it if you’ve never done this before. Simple ingredients: A clean glass jar with a lid Organic vegetables (including the hottest vegetable of the moment, cauliflower) Water Unrefined salt Vegetables – Use a single vegetable or any combo, (e.g. cabbage, capsicum, cauliflower, broccoli, cucumber, onion, carrot, fresh herbs). By the way, the cabbage family of vegetables is great for the liver. The greatly enhance liver function and support Liver detox. Why organic? Apart from the obvious reason that they do not contain pesticides, organic vegetables abound more in a variety of beneficial types of bacteria. This will make the fermentation process more successful and will also provide your gut with a variety of very good bacteria. Method Finely chop the vegetables Place in jar. Pour in saltwater solution. (2 Tbsp salt per 1 Liter or 1 quart of water…well dissolved). Vegetables must be completely covered but leave a space of about 2 cm to allow for bubbling during the fermentation process. Screw lid on jar. Leave, away from direct sun, for at least 3 to 4 days, opening the jar once or twice daily to release gas. We like to give the vegetables a bit of a poke with a wooden chopstick to encourage the release of the gas bubbles. After a few days, the vegetables will be fermented and ready to eat. From then on, store them in the refrigerator. They will keep for a long time…months…but must be refrigerated and must be kept covered by the fermentation liquid. Serve with a meal to aid digestion. Sweet Potato, Leek and Salsa
Try this delicious warming recipe during your Herbal DETOX or Herbal SLIM program. It is filling and hearty and makes you feel very satisfied. Serves 2 people Ingredients: 1 x Medium Kumara (sweet potato) or 2 Parsnips 1 x Large Leek 1 x Large Broccoli Salsa: Coconut oil 1 x Onion 6 x large cloves of garlic 1 x Capsicum Garlic Shoots Tomato paste 250gm Cumin powder Oregano herb Paprika powder Cayenne pepper Turmeric powder Soy Sauce Apple cider vinegar Honey Method: Scrub the Sweet potato and oven bake in Jacket for 45 minutes at 180 Celsius. While the Sweet potato is baking finely slice leek and dice broccoli and place in a saucepan with only 2cm of water. You will want to simmer the saucepan for about 10 minutes and time this in with the Sweet Potato. Salsa method: On the side, dice the onion, garlic shoots, and garlic and place in a frying pan with 2 Tbsp of Coconut oil (or cold-pressed olive oil). Saute while adding the herbs to your taste. This will create a kind of curry paste. Gently blend in 1 Tbsp honey, 1 Tbsp vinegar, and 1 Tbsp soya sauce, then add the tomato paste and diced capsicum. Add a little water until you get the consistency of salsa you prefer. You are now ready to serve. The average sweet potato contains over 400% of your daily needs for vitamin A, more than any other food including beef liver, spinach, and carrots. Vitamin A is essential for the proper function of the retinal cells in the eyes. That’s where the old saying “Eat your carrots and you will be able to see in the dark” originated. Now you can tell your children to “Eat your sweet potato” as well.
Kumara, Capsicum Leafy Salad
This recipe makes an ideal lunch or dinner during your one or two-month Detox or Slim program. (Without the Feta it is suitable for 7 to 14-day DETOX program) This is very quickly prepared, using cubes of kumara or sweet potato leftover from a previous night’s meal. Serves 2 people Ingredients: 1 x Cooked sweet potato (Kumara), chopped into mouth-size pieces A Handful of Mesculin salad 1 x chopped red capsicum 50g of diced Feta cheese Method:Blend all together. The Kumara and feta give substance to an otherwise light and leafy salad. Cottage cheese or ricotta may be substituted for feta. Aioli Dressing:Peel and crush 3-6 cloves of garlic. Whisk together with 1/2 cup of yogurt, 1/4 cup extra virgin olive oil, Juice of 1/2 lime (or lemon), 1 tbsp of apple cider vinegar. Sweeten with 2tsp liquid honey or 2 x crushed stevia tablets. Scrambled eggs
Try these Extra filling Scrambled Eggs This is a great complete breakfast, which keeps you going all morning. Perfect during a Slimming program. Low GI and high in protein. Ingredients: (per serving) 1 large knob of butter 3 Organic Free-range Eggs Tomato, Basil, and Parsley Method: Heat the pan first then throw in the butter and break eggs quickly before the butter has completely melted. Whisk the eggs continuously with a fork, attempting to eliminate the appearance of any white. Turn the pan off as soon as the egg begins to stiffen, allowing the egg to finish cooking from the latent heat of the pan. The extra amount of butter makes the egg bright yellow and extra rich. Chocolate Orange Mint Protein smoothie
This is a fantastic recipe for energy, protein, antioxidants, fat burning, muscle building, and general ultimate health. You can get all you need from fruit and vegetables. Not only is this smoothie super healthy but it tastes like a dream come true – It’s the addition of the mint to the mix that really sets this drink alive and it will set you alive as well. You really need a high-speed blender like the Ladyship Blender to do this properly, otherwise, you will end up with some of the orange skin and pith as small lumps in your drink. You can peel your orange if you don’t think your blender will do the trick. Indian Style Cauliflower Curry
This great simple coconut curry can be made with all kinds of vegetables depending on their availability. This makes it very versatile. Super healthy during your herbal detox, and incredibly delicious you need to make plenty of this dish for the whole family. Serves 4 people Ingredients: 1 1⁄2 tablespoons extra virgin oil 1⁄2 tsp cumin seeds (optional) 1⁄2 large white onion diced up 2 x garlic cloves crushed 2 tsp hot curry powder 1 x 440gm can of diced tomatoes 3 tbsp of tomato paste 400ml of water 2 x average sized zucchinis or a quarter of a cabbage 1/2 Buttercup Pumpkin 1 heaped cup of cauliflower florets 1 large carrot or red capsicum 1⁄2 cup coconut milk Chopped cilantro Pinch of salt Add in Brown rice if doing the 1 or month DETOX & SLIM Programs if you wish Method: Puree the tomatoes with 400ml of water and tomato paste. Heat oil in pan or wok. Add cumin seeds. When they sizzle, add chopped onion and cook until lightly browned. Add minced garlic and curry powder then stir for 30 seconds. Pour in pureed tomatoes, coconut milk and salt then bring to a boil. Reduce heat to medium, cover, and simmer for about 10 minutes or till the sauce thickens a little. Add chopped zucchinis (or cabbage), cauliflower, and carrot (red capsicum) then simmer until zucchini is soft. Serve with cilantro sprinkled on top. Sweet & Sour Chinese Style
This is a nice variation on Chinese sweet and sour. You can use these ingredients or try other vegetables of your choice. If you’re doing the one or two-month Herbal DETOX program then you could include some cubed fish, and if you’re doing the Herbal SLIM program then you could even try cubed chicken. Just quickly stir-fry the meat first, place aside and add back in just before serving. Serves 4 people Ingredients: Vegetables: 1 x large onion 6 x cloves of garlic 2 x carrots 2 x capsicums 1 x small head of broccoli 6 x flat mushrooms 1 x handful of spinach greens (or green runner beans) 1 x ring of pineapple chopped into pieces Sauce: 1⁄2 cup tomato paste 2 tbsp fresh ginger 1 small lemon 1 tsp paprika 1 tsp turmeric 2 dstp honey 1 tsp cayenne 1 dstp soy sauce Method: First of all mix the sauce, by melting the honey in hot water. Place dry ingredients in a bowl and mix, while adding soy sauce, lemon juice, and melted honey. Combine with tomato paste and fresh ginger. Then chop all vegetables into bite-size pieces as you desire. Slice and stir fry the mushrooms first and place to one side. Sauté in olive oil the onions, garlic for 2 minutes, then add the carrots, broccoli until half cooked and still crunchy. Add the spinach greens, mushrooms, pineapple and sauce and allow to come to a gentle simmer to 2 minutes. Serve fresh with a sprinkling of fresh cilantro. Salmon, Sweet Potato and Feta
A very simple and super quick recipe for your Ultimate Herbal SLIM. The most amazing thing about Salmon is the flavor, not only the incredibly good fat and wonderful protein. We need good fat to keep our metabolism steady and supply our body with essential fatty acids (EFA’s), which make up every cell in the body. Serves 2 people Ingredients: Small salmon fillet 1/2 Sweet potato (Kumara) 1 x tomato 1/2 onion 1/2 capsicum Salad greens (or chopped Avocado and cucumber) Diced Feta Method: Fry the salmon in a tiny bit of olive oil until crisp, and also fry the Sweet potato wedges, capsicum, and wedged onion. Lay the sweet potato, onion capsicum, and tomato on the salad greens and sprinkle with Feta, Serve with aioli. You can eat this as often as you like during your Slimming Program, without any guilt. Curry Corn Salad
Totally delicious and very filling, this is a great recipe for your detox while sweet corn is in season. Perfect for your Ultimate Herbal DETOX Serves 4 people Ingredients: 1/2 white onions 3 x cobs of corn Salad greens 2 x medium tomatoes 1 x large avocado 1/4 cup apple cider vinegar 1⁄4 cup cold pressed extra virgin olive oil 2-3 teaspoons of curry powder 1⁄2 tsp raw salt. Method: Grill corn on high setting for 5-6 minutes rotating until slightly charred. Slice kernels from the cob and combine with diced onions. Blend olive oil, vinegar, curry powder, and salt and stir into corn kernels. Nicely lay out salad greens, tomatoes and avocado and pour corn into center. As a nice extra, I also added some grilled capsicum to this recipe, which you can see in the photo. Lutein and zeaxanthin are the predominant carotenoids in yellow corn but their levels are generally low in white corn. Commonly known as macular pigments, lutein and zeaxanthin are found in the human retina, (the light-sensitive inner surface of the eye), where they protect against oxidative damage caused by blue light.
