Lime, Coconut & Avocado whip
Chia seeds and avocado make up this filling and delicious dessert. Pop a fresh strawberry on top to make it a celebration! Great for during your detox or slimming program and it only takes a few minutes. Serves 3 people Ingredients: 1 large avocado 1 Lime 1 Dessertspoon of Chia Seeds 1 can of coconut cream or 500ml of Coconut Yogurt 1 tsp of stevia or 3 stevia tablets 1 Dessertspoon of honey 12 cubes of ice Method: Soak Chia Seeds in 100ml of water for 20 minutes or until thick. Cauliflower Curry
A wonderfully warm and filling curry which is perfect for your Herbal DETOX or Herbal SLIM program. You can spice it up as much as you wish! Serves 2 – 4 people Ingredients: 1 x head of cauliflower chopped into small florets Curry Paste: 1 x diced onion 8 x cloves garlic finely chopped 1 tsp cumin seeds 1 tsp coriander seeds 1/2 tsp black mustard seeds 1 tsp paprika 1 tsp turmeric 1 tsp curry powder Mince together in mortar and pestle (or food processor) until a paste forms Method: Heat oil in a covered roasting dish. Rub curry paste into the florets of cauliflower by hand (a little messy) and place into pan with an extra drizzle of oil. Bake in the oven at 200o C until cauliflower starts to brown, about 30 minutes. Grill on high for a further 10 minutes to slightly char the top. I like it served with roasted pumpkin. Chocolate Pineapple Yogurt
Try my latest favorite dessert – Chocolate Pineapple Yogurt! We ate it quite a lot during our last Ultimate Herbal DETOX. It’s so fast and easy you won’t believe it. It takes about 5 minutes maximum! Ingredients: (per serving) 2 cups of plain unsweetened yogurt 2 tsp of Raw Cacao powder 1 inch thick ring of pineapple 1 tsp Cinnamon Small handful of raisins 1 tsp of stevia powder Method: Put the yogurt into your dessert bowl and add the Cacao powder and crushed stevia powder (or drops). Stir with a whisk until smooth. Cut the pineapple into small bite size wedges and drop onto the yogurt. Sprinkle with Raisins and dust with the cinnamon. I like about 6 dates with mine. Spinach & Sweet Potato Salsa
Nothing is healthier than an all vegetable meal full of greens, antioxidants, and warming herbs. This is another simple 30-minute meal that uses Sweet Potato once again. Delicious and filling with a warm Chili flavor. Serves 2 people Ingredients: 2 large carrots 2 medium (or 1 large) sweet potato (Kumara) Large Handful of spinach leaves Cut sweet potato and carrots into wedges and pan fry or roast until cooked. While these are cooking prepare the salsa as below. Once the root vegetables are cooked, serve on a bed of fresh spinach leaves and cover with salsa. You can add a little feta if you’re on a one-month plan. Salsa: A swirl of olive oil in a pan 1/2 red capsicum 1 onion 6 cloves garlic 3 x pureed tomatoes (or a 400g can) See Brett’s Tomato Base Recipe Here 50ml of tomato sauce or tomato paste (use my tomato base recipe) 1 tsp mixed herbs 1 tsp turmeric 1/2 tsp cayenne pepper (or 6 chopped fresh chilies) Dash of soy sauce 1 Tablespoon of honey Stir-fry Garlic, onions until soft then mix in herbs and spices. Add capsicum, soy sauce, tomato paste, honey, and puree. Mix until thick and hot. Spinach Superfood It is well known that spinach is a superfood because of its very high levels of many nutrients. The cartoon character Popeye was seen to get big muscles whenever he ate spinach! A recent study has shown that Nitrates may, in fact, increase muscle strength. How to Make the Worlds Best Orange Juice for FREE
Brett makes 1 litre of the worlds best orange using the amazing Ladyship high speed juice extractor/blender. This blender is what Brett recommends to use during the Ultimate Herbal DETOX and Herbal SLIM programs. The whole orange is used including the skin. Corn & Mushroom Protein Salad
Here’s a simple summer salad to try during your Herbal DETOX or Herbal SLIM program. It is very satisfying with the corn and mushrooms for protein. Serves 2 people Ingredients: 1 x Capsicum 1 x Cob of corn 1 x Avocado 2 x Tomato 1/3 Telegraph cucumber 250 gm of Mushrooms 12 cloves of garlic A small handful of mint or basil Method: Slice mushrooms and capsicum and shave kernels off the corn cob. Peel garlic cloves and leave whole. Heat olive oil in a pan and throw in mushrooms and capsicum together. Fry for 3-4 minutes then add the garlic and corn kernels. Stir fry until a little browned and cooked to your preference. Place stir-fry into large bowls and add sliced avocado, cucumber, tomato and combine. Sprinkle with basil and mint and serve. You are now ready to serve. Barbecued Vegetables
Maybe it’s time to try a vegetarian Barbecue? When it’s the Beer and Barbecue silly season, you don’t have to be a sausage and bread person just because everybody else might be gulping them down. You might want to come out of your holidays feeling all light and bright and ready to face the year ahead. You might want to be wise and choose healthy barbecue ingredients so you can continue your DETOX or SLIM program. There is a lot of great foods you can throw on the BBQ during the holiday season. Grilled Try slicing Capsicums in half and char-grilling. Rub a little coconut oil into cobs of corn and grill until lightly browned You can wrap small sweet potato or carrots in foil and grill until soft On the plate Try slicing cauliflower or broccoli into thick steaks, rub with herbs and oil and fry until just crunchy Whole flat mushrooms are great with a little coconut oil rubbed in You can do the same with Zucchini or eggplant The old favorite fried onion, leave it crunchy and add lots of chunky garlic https://www.youtube.com/watch?v=xctfJRCQFKM Another favorite, vegetable Kebabs. You can skewer almost any vegetable and roast it over the BBQ grill. Here are some of my top choices: Mushrooms, red and white onion, capsicum (all colours), zucchini, tofu, fish, eggplant, cherry tomato, kumara (sweet potato), carrot, olives. Simply skewer a collection of your top choices and coat with olive oil, turn until cooked and slightly charred. Delicious! Delicious with a fresh salad, tomatoes, avocado and spicy salad dressing
Grilled Artichokes & Green Bean salad
There are few things as nice as a boiled artichoke with a herb and mustard dressing. This an easy way to eat this great vegetable and perfect for all the herbal programs. Serves 2-3 people Ingredients: 400g of fresh beans (trimmed) 2 x lemons (each one cut into 8 pieces) 2 x dstsp of coriander seeds 6 x artichokes with their stems removed (or you could use 300-400gm bottled artichoke hearts) Dressing: 1/2 cup of extra virgin olive oil 1/2 cup of plain joghurt 3 x dstsp of lemon juice 2 x dstsp of whole grain mustard Quarter of a cup of finely chopped parsley 4 x tsp of capers Method: Bring a large pot of salted water to the boil. Add beans and bring back to the boil and cook for about 3 minutes. Drain and refresh in cold water. Add the lemon pieces and coriander seeds into the pot and boil for one minute. Add artichokes to the pot and boil of 10 to 20 minutes. Drain with the stem side upwards. Once cool to handle, start pulling off the leaves. Once removed, pull out the centre which will look quite inedible. Trim off any bits that look too chewy with a sharp knife. Lightly brush the artichokes with the extra virgin olive oil and then grill them until they start to go golden brown. Mix all the dressing ingredients together and pour over the artichokes. Gazpacho (Cold soup)
This is a simple recipe that creates a lovely meal with gorgeous tomatoes – a beautiful splash of red! This is a great recipe during all the herbal programs. Serves 4 people Ingredients: 4 cups of tomato juice 12 medium tomatoes with the skins removed 1 medium-sized cucumber Half a red onion 2 cloves of garlic 1 green capsicum (diced small) 1 tsp of honey 3 x spring onions (chopped) Juice of half a lemon Juice of half a lime 2 dstsp of wine vinegar 1 tsp of tarragon 3 tsp of fresh basil (torn) Half a tsp of cumin A quarter of a cup of fresh parsley 2 dstp of extra virigin olive oil Salt and black pepper Method: Keep a small portion of the cucumber and diced tomatoes to create some texture and for garnish at the end. Put the remaining ingredients in the Ladyship blender and process. Chill in the fridge until very cold. Add some of the reserved tomatoes and cucumber but leave a little for garnish on top. Decorate with additional basil if you have any and garnish. Tarragon has been used as a traditional remedy to stimulate appetite and alleviate anorexic symptoms. Fresh tarragon is one of the highest antioxidant value food sources among the common herbs. The herb is a very rich source of vitamins such as vitamin-C, vitamin-A as well as B-complex group of vitamins.
