A lovely fresh salad, full of healthy greens, mushrooms, avocado, and tomatoes. All with a pinch of oregano! Fantastic for your detox program.
Add more mushrooms to this recipe to make it even more filling.
Serves 2 to 4 people
Ingredients:
Salad Dressing:
- 8 cloves of garlic
- Plain unsweetened yogurt
- 1 x lemon
- 2 tbsp of extra virgin olive oil
- 1 tsp of oregano
Salad:
- 6 x large field mushrooms
- 2 tbsp of extra virgin olive oil
- Mesculin salad greens
- Half an avocado
- 2 x tomatoes
- A dozen olives
- 6 pieces of sundried tomatoes
Method:
Prepare the salad dressing by peeling then crushing the garlic and putting it in a small bowl. Add the yogurt then squeeze in the lemon juice from the lemon. Add the extra virgin olive oil and the oregano. Mix until smooth.
Cut up the field mushrooms into think pieces and saute in extra virgin olive oil until soft. Throw the mesclun salad greens into a large bowl. Skin and slice the avocado and add to the green salad. Place the warm field mushrooms onto the top of the salad and add the tomatoes. Add a dozen olives to the salad. Cut up the sundried tomatoes and add them to the large bowl. Pour the salad dressing over the salad in the large bowl and toss gently.
