Totally delicious and very filling, this is a great recipe for your detox while sweet corn is in season. Perfect for your Ultimate Herbal DETOX 

Serves 4 people

Ingredients:

 

  • 1/2 white onions
  • 3 x cobs of corn
  • Salad greens
  • 2 x medium tomatoes
  • 1 x large avocado
  • 1/4 cup apple cider vinegar
  • 1⁄4 cup cold pressed extra virgin olive oil
  • 2-3 teaspoons of curry powder
  • 1⁄2 tsp raw salt.

Method: Grill corn on high setting for 5-6 minutes rotating until slightly charred. Slice kernels from the cob and combine with diced onions. Blend olive oil, vinegar, curry powder, and salt and stir into corn kernels. Nicely lay out salad greens, tomatoes and avocado and pour corn into center.

As a nice extra, I also added some grilled capsicum to this recipe, which you can see in the photo.

Research has shown that a good intake of antioxidants, most importantly carotenoids, (like such as zeaxanthin and lutein), may have positive benefits on our eyes.

Lutein and zeaxanthin are the predominant carotenoids in yellow corn but their levels are generally low in white corn.

Commonly known as macular pigments, lutein and zeaxanthin are found in the human retina, (the light-sensitive inner surface of the eye), where they protect against oxidative damage caused by blue light.
